Mambo Martini
This martini is
made up ahead of time and is very simple.
Watch out, it packs a punch!
2 cups (500ml)
Vodka
1 1/4 cups (290g) peeled fresh pineapple
1 jalapeno pepper, seeded and sliced
1/4 cup (60ml) pineapple juice
In a pitcher or any other
glass container, combined vodka, pineapple slices and the jalapeno
peppers.
Cover and let stand for 24 to 48 hours (the longer the mixture
stands the spicier it gets).
When ready to serve, add pineapple juice and ice cubes. Shake
vigorously and then strain into chilled Martini glasses.
Makes four power punching martini cocktails.
